Blanchard’s Beach Shack is a regular stop on our visits to Anguilla, but this trip, we had a new menu item we had to try, fried chicken. We have always loved the burgers, street tacos, and jerk chicken bowls, not to mention the rum punch, but the thought of fried chicken pulled us in. The chicken is offered cilantro-lime, blue cheese, spicy sriracha, sweet chili, BBQ, honey BBQ and vegan chipotle-lime sauces. We made three visits this trip to try all the sauces. We are not usually ones to visit resort restaurants, generally preferring to dine at local establishments on our trips to the Caribbean. But there are some places that prove us wrong, and prove that we could really be missing out. This trip to Cap Juluca, we had lunch and dinner at Uchu, known for bringing the cuisine of Peru to the shores of Anguilla. While enjoying the Caribbean Rum Tasting with Walter, we learned he would be teaching the Cocktail Master Class from the Cap Juluca Activities Guide, so sign us up! The class was conducted at the main bar at Cip’s and was so popular, that the bar was full by the time class started. So let’s break out the cocktail shaker and get started! We’re on a mission to experience all the alcohol-related experiences which are complimentary at Cap Juluca, Anguilla. Our next stop: the wine tasting. We knew we wanted to do the rum tasting, so we booked that through the concierge, but while there, we decided we would try the wine tasting. In November of 2025, we returned for another stay at Cap Juluca, Anguilla for a week of soaking up the sun on Anguilla’s best beach, Maunday’s Bay. We were last at Cap Juluca in 2019, when the resort was fresh off its $100M+ post-Irma renovation. I took this shot of the island from the air as we departed Anguilla for the 8th time. I was remembering many relaxing days on the beach at Cap Juluca, and visits to our favorite restaurants, along with a few new ones. We indulged in the rum tasting, wine tasting, champagne sabering, and cocktail classes at Cap Juluca, meeting many new friends. We drove around a bit to see how the island had changed since we were last here in 2023. We flew into Anguilla on a Saturday afternoon, so Sunday was our first full day on the island. We hit the beach early, and were just starting to think about lunch when we heard the music start up at the Sunshine Shack, just down the beach from our resort, Aurora Anguilla. We walked down the beach, and grabbed a rum punch. The bar was humming, and Garvey was working the grill, mixing the scent of grilled chicken with the ocean breeze.
