    When you arrive at Da Conch Shack, Providenciales, Turks & Caicos Islands, you are immediately drawn to the fresh conch, pulled from the sea before your eyes.  But don’t overlook the offerings of Da Conch Shack’s Rum Bar, including Jan’s Infamous Rum Punch.  You know it’s good when you can see that nice float of dark rum on top.     Taste of the Caribbean: Conch Fritters

    On Taste of the Caribbean today, we have one of our favorite beach eats, conch fritters.  A batter is made into which conch, peppers, onions, and seasonings are mixed, and then spoonfuls of the batter are dropped into the deep fryer.  Served with a dipping sauce, it’s the perfect partner to a cold Turks Head or other island brew. These beauties were found at Da Conch Shack, Providenciales, Turks & Caicos Islands, where you can see the conch pulled from the ocean right before your eyes.  For photos and details of our visits to Da Conch Shack, read our trip report!

    It’s a classic found throughout the Caribbean.  Peas and rice accompany many of our favorite meals on our travels through the islands.  This gorgeous plate of food was found at Hole in the Wall, on Airport Road, Providenciales, Turks & Caicos Islands.  It was recommended by our rental car agent (rental car guys and taxi drivers are some of the best sources of this kind of information).     Our daughter has always been a pretty adventurous orderer, surprising restauranteurs with her selections.  When she was 7-years-old and we traveled to Mexico, she ordered squid and octopus.  We began traveling to the Caribbean when she was 9, and she was the first to order some of the local fare, including oxtails.  The rich stew of braised oxtails paired with rice, and in this case, the familiar onion rings, met with her approval.     It’s time to launch our new series featuring our favorite dishes from the Caribbean islands.  Today’s feature is Conch Salad from the Turks & Caicos Islands.  This particular conch salad comes from Da Conch Shack, located in the Blue Hills area of Providenciales.  At Da Conch Shack, you can watch as they pull the conch from the sea, extract it from its shell at a table beach side, and then transport it to the kitchen where it is mixed with lime juice, peppers, tomatoes, and onions into this delicious treat.  Pair it with Jan’s Infamous Rum Punch, and you have the perfect seaside lunch.   For more about Da Conch…
