It’s time to launch our new series featuring our favorite dishes from the Caribbean islands. Today’s feature is Conch Salad from the Turks & Caicos Islands. This particular conch salad comes from Da Conch Shack, located in the Blue Hills area of Providenciales. At Da Conch Shack, you can watch as they pull the conch from the sea, extract it from its shell at a table beach side, and then transport it to the kitchen where it is mixed with lime juice, peppers, tomatoes, and onions into this delicious treat. You may have noticed that watermarks have started to appear on images on My Irie Time. I have not used them before because I find them distracting to the images. Unfortunately, image theft is running rampant, and I now find the need to use a watermark to reinforce my copyright. I have discovered multiple unauthorized uses of my images, including use on commercial sites. Although a thief can still try to crop out or remove the watermark, the copyright law prohibits doing so and entitles the owner of the copyrighted materials to damages, including attorneys fees. I have to admit, “X” was a tough one. The only “X” words that came to mind were “x-ray” and “xylophone.” So I spent a bit of time on the internet looking through Scrabble guides for “X.” When I saw “xenophile,” I knew I had a winner. The Caribbean’s best attraction after the beach is the water that surrounds it. The region offers a variety of watersports for you to enjoy, including surfing, swimming, scuba diving, snorkeling, sailing, and stand-up paddleboarding. This shop in Trellis Bay on Beef Island, British Virgin Islands, just a few minutes from the airport, offers instruction in kiteboarding, surfing, kayak tours, and windsurfing.
