We are not usually ones to visit resort restaurants, generally preferring to dine at local establishments on our trips to the Caribbean. But there are some places that prove us wrong, and prove that we could really be missing out. This trip to Cap Juluca, we had lunch and dinner at Uchu, known for bringing the cuisine of Peru to the shores of Anguilla.




We were first tempted when we heard raves about the ceviche, so one afternoon after a long morning at the beach, we stopped in for a bite. Uchu is set just outside the bar just across from the concierge, overlooking beautiful Maunday’s Bay. The ceviche features the catch of the day, sweet potato, and Andean corn, a nutty Peruvian corn. Served with pickled onions, radishes, avocado, lime, and plantain chips, we made our way clean down to the llamas at the bottom of the bowl!



After the champagne sabering one night, and without any specific plans, we decided to walk over to try dinner. It is rare that we not have a reservation for dinner, so it was entirely impromptu, and I hadn’t even looked over the dinner menu, but it was a real treat.








We started off with an amuse bouche and some tasty bread, and then the entrees. The menu varies, and was not the same that night as you may encounter, but everything had great flavor, was fresh, and was unique to anything we had tried before. Give Uchu a chance and you won’t be disappointed!
